Ireland, the Emerald Isle, is relatively small, no bigger than the state of Maine. Yet it has had a remarkably disproportionate impact on the world. Irish influence in music is evident in many genres, from bluegrass to rock. Some of the more famous exports include U2 Thin Lizzy, Sinead O’Connor, Enya, the Chieftains, Riverdance, and opera tenor John McCormack.

Ireland experienced an incredible economic boom during the “Celtic Tiger” years from 1995 - 2007. With it came a surge in immigration. These new expatriates brought with them rich cuisine with many new flavors lifting the once drab Irish cuisine out of the doldrums.

No matter where you are in Ireland, you are no more than 75 miles from the ocean. To the west is the rugged Atlantic Way with some of the most picturesque shore line on the planet. And just about everywhere you stand, you’ll see lush green landscapes - as Johnny Cash says, “40 shades of green.”
